McCabe \& Barton is partnering with a leading insurance business to hire an Artificial Intelligence Engineer for a hands-on role focused on building and deploying practical AI solutions across the organisation.

This is an opportunity to work on real-world Generative AI use cases, including copilots, chatbots, document intelligence tools and LLM-driven workflows, within a regulated insurance environment.

The role will suit a pragmatic engineer who can move beyond proof of concept and deliver secure, scalable and production-ready AI solutions.

Key experience required

• Strong Python and backend engineering experience
• Hands-on experience with OpenAI and/or Anthropic Claude APIs
• Practical experience with prompt engineering and LLM application development
• Experience with RAG, embeddings and vector databases
• Google Cloud Platform experience, ideally including Vertex AI
• Familiarity with CI/CD, Docker and modern cloud architecture
• Ability to work with both structured and unstructured data
• Strong understanding of security, scalability and production-readiness

Experience in insurance, financial services or another regulated environment would be advantageous, but the key requirement is proven hands-on AI engineering capability.
