Generative AI Engineer

London, hybrid, minimum 2 days per week in the office Permanent Insurance sector McCabe \& Barton is partnering with a leading insurance business to hire an Artificial Intelligence Engineer for a hands-on role focused on building and deploying practical AI solutions across the organisation. This is an opportunity to work on real-world Generative AI use cases, including copilots, chatbots, document intelligence tools and LLM-driven workflows, within a regulated insurance environment. The role will suit a pragmatic engineer who can move beyond proof of concept and deliver secure, scalable and production-ready AI solutions. Key experience required: * Strong Python and backend engineering experience * Hands-on experience with OpenAI and/or Anthropic Claude APIs * Practical experience with prompt engineering and LLM application development * Experience with RAG, embeddings and vector databases * Google Cloud Platform experience, ideally including Vertex AI * Familiarity with CI/CD, Docker and modern cloud architecture * Ability to work with both structured and unstructured data * Strong understanding of security, scalability and production-readiness Experience in insurance, financial services or another regulated environment would be advantageous, but the key requirement is proven hands-on AI engineering capability.
